ingredients
a splash of olive oil
3-4 medium sized leeks cut into slices
2 cloves of garlic, chopped
dried rosemary to your taste (i use around a tablespoon measure, maybe slightly more)
1 butternut squash, peeled and cut into cubes
around 750ml of vegetable stock (i use marigold, vegan bouillon powder)
chilli flakes to your taste (i use about half a teaspoon)
1 tin of cannellini beans, rinsed and drained

method
- heat the oil in a pan
- add the leeks and garlic and stir on a low heat until they soften
- add the stock, squash, chilli and rosemary
- cover and bring to the boil, cook for 15 minutes until the squash is tender
- add the beans and cook for another 5 minutes
- mash some of the squash against the side of the pan to give the stew some thickness
variations
- try adding some quinoa (i prepared the quinoa first - well rinsed and bolied for 20 mins - check instructions on the packet for water quantities - then serve in a bowl on the side or stir in)
- vary the veggies, i also add green beans and whatever needs using up in the fridge
- serve with brown rice
- serve with crusty bread or some homemade gluten free bread
- add some homemade dumplings (check out kate's blog for gluten free dumplings i'm going to try her stew also :-))
- if you'd like a meat version, this goes really nicely with a gammon steak (so my partner tells me :-))
